Tsaghkunk puts ‘cave cuisine’ on your plate

TSAĞKUNK, Armenia — Nestled in the Caucasus Mountains, Armenia promises to escape to a world untouched by time.

My adventure started from the capital Yerevan, which rises like a phoenix from the volcanic plains. At its heart is a unique architectural heritage, buildings glistening with honey, carved from tuff — a rock composed of volcanic ash collected from the Armenian mountains. This unique stone has been used to build everything from agricultural structures to religious buildings and castles. In addition to the architecture, the breathtaking beauty of Lake Sevan offers a tranquil counterpoint to the rugged mountains that surround it.
